Tomato Casserole

Ingredients

  • 4 large ripe tomatoes
  • 1/4 lb. Asiago, Parmesan, Romano cheese, shredded
  • 1/2 lb. seasoned bread crumbs
  • 1/4 cup olive oil
  • 1/2 lb. fresh mozzarella cheese, diced
  • Camp Mix seasoning

Core tomatoes and discard core. Dice the tomatoes and mix with mozzarella cheese, Camp Mix (to taste), and half of the cheese mixture (Asiago, Parmesan, and Romano). Add the mixture to a greased baking dish. In a separate bowl combine bread crumbs, olive oil, and remainder of the cheese mixture (Asiago, Parmesan, and Romano) and mix together. Add this mixture to the top of the tomatoes in the baking dish.

Bake at 400°F for 12-15 minutes until golden brown and cheese melts.
